Only in Playa Santiago: A local speciality is the parrotfish (vieja), which is mainly found in the Atlantic Ocean and the western Mediterranean. Chefs use it to create a gourmet plate by either frying or boiling it and serving it with tomato, onion, green pepper, garlic and parsley.
